Malic acid is used in foods as an acidulant and flavoring agent and as a color stabilizer in apple and grapefruit juices. Malic acid is one of theorganic acidsin grapes, which increases the acidity of wine. Withmalolactic fermentation, it is converted intolactic acid, which, being less acidic than malic acid, reduces the acidity of the wine, which is necessary for red wines and not so much for white wines in which we desire greater acidity.
