Sour malt, also known as Acid or Acidulated, contains a small amount (1-2% by weight) of lactic acid. It has the property of adjusting the pH of the wort, and for this reason it was traditionally used in cities with very alkaline water. However, it is also used for its flavor characteristics, as lactic acid has a characteristic flavor that suits more acidic types of beer.
